Covid 19 brought out all the bread making curious people, and I can't get enough of it! I am a former baker/pastry chef, and so I love seeing people taking the time to learn to make bread. There is really nothing better than homemade bread.
So I present to you: The Vegan Yeast Dinner Roll. I know that rolls can seem a little intimidating but this recipe is easy and will NOT let you down in any way. They are simply delicious! I like to dress them up with a bit of rosemary, since I flipping LOVE rosemary.
Makes 12 rolls
2 cups All-Purpose Flour, plus more for rolling (or gluten free, if that's what you're into)
1/2 tsp. sea salt
1/2 cup milk alternative (I like to use unsweetened almond/cashew milk for added protein)
2 Tbsp. Vegan butter + more for coating rolls
1 packet or 2 1/4 tsp. rapid rising yeast
1 tsp. fresh chopped rosemary
1/4 cup filtered water
2 tbsp. organic cane sugar
You dont need to use a mixer with a dough hook, but if you have one, I recommend!
Take 3/4 cup flour, yeast, salt, rosemary, and sugar and place in the bottom of the bowl.
In a small saucepan, warm milk, water, and butter. Make sure it's not too hot, otherwise you will kill the yeast (bacteria).
Add the wet ingredients to the dry ingredients in the bowl, and turn the mixer on low for about two minutes, scraping down sides as necessary.
Slowly add 1/4 cup of flour to dough, and then just enough more so that the dough is soft for another two minutes.
Remove from bowl, and place on a floured surface and begin to knead the dough (check out this video to see how to do that!).
Divide the dough into 12 even sized pieces (I like to mold my dough into a circle, quarter it, then quarter it again, etc. until I get 12 pieces).
Shape the 12 pieces into balls, and place into 8X8 dish or 8 inch round pan.( They dont need to be perfect, but if you're into practicing, here is good video to show you how!)
Cover the rolls with a towel (any towel will do) in somewhat of a warm place (I like to place them next to my oven while I preheat) for about 30-45 minutes until doubled in size (MAGICAL).
Preheat oven to 375* and lightly coat the top of the rolls with vegan butter and bake for 18-20 minutes until golden brown and PERFECT.
I hope you like this recipe as much as I do. Perfect for anytime of year, but certainly can dress up any holiday feast.
